My son and I both need to eat a grain-free / gluten-free diet for health purposes. Hence, I am always on the lookout for ways I can modify a recipe and make it comply with our dietary needs. Baked goods are challenging though, as the texture is difficult to get correct. In fact, many recipes for baked goods are actually quite crumbly when eaten and turn into almost like sawdust in your mouth.
I have a recipe for grain-free banana walnut muffins (Marci’s Magic Muffins) made with walnuts that is a crowd pleaser and easy to clean up. I also have a Hazelnut Pancake recipe I created that is a family favorite as well. But in the mean time, let’s get started with details for these fabulous Almond Flour Crepes.
Almond Flour Crepe Recipe
Ingredients:
1-1/4 c. almond flour
6 large, cage free eggs
4 Tbs. honey
2 Tbs. vanilla
1 tsp. ground cinnamon
1/4 tsp. sea salt
1/4 tsp. baking soda
1 Tbs. melted grass-fed butter (Plus 2 Tbs. more for cooking) – replace with avocado oil if you want them to be dairy-free
Directions:
Place the wet ingredients (eggs, honey, vanilla, 1Tbs. melted butter), then spices (cinnamon, sea salt, baking soda), and finally the almond flour into an immersion blender or food processor.
Place lid on top and turn on, making sure to combine the ingredients well. Then, remove the lid and scrape down the sides to be sure there aren’t any pockets of flour. Put the lid back on tightly and blend again.
Preheat a skillet on your stove-top. Add 1/2 tsp butter and swirl it around in the pan until the bottom is well greased. Pour 1/4 c. batter in the hot pan and spread with a spatula until it is very thin. Cook over medium-low heat, watching carefully for the edges to begin to look dry. The time this takes depends on you pan, how thin you spread your batter, and the heat of your stove. Watch very carefully though, because it is easy to overcook these.
Flip it over carefully and cook only another 2 to 3 minutes on the second side (just long enough to turn it brown).
When you remove the crepe from the stove top, be ready to fill it with your favorite filling immediately. You will be able to roll them well while they are still hot, but as the crepes cool they will break if you try to roll them. Hence, as soon as you take them off the stove, fill and roll each one right away.
