Key Lime Pudding You Can Feel Good About Eating

I am always looking for great new recipes with brain healthy, simple ingredients.  When I came across this Key Lime Pudding recipe from the blender girl I knew I had to give it a try. Avocados are one of the brain healthy fats we recommend to people, but I often hear people stuck on a few staple ways to use avocados.  I am always excited when I can point them to new options… especially if that option happens to be a dessert!

What are the health benefits of avocados?

Avocados are a nutrient dense fruit, which is why they are sometimes called a super food. Let’s start with a health benefit of avocados most people don’t realize…. they have more potassium than a banana. They also do not contain any sodium or cholesterol and are low in saturated fat.  While 77% of the calories in an avocado are from fat, they are from healthy fats that are good for your brain! Recipe Review

This Key Lime Pudding recipe was so simple to make, super creamy, and oh so tasty.  My kids both loved it.  I made it with honey once (to be compliant with the SCD diet my son is on to manage his Crohn’s disease) and I made another batch with maple syrup so I could speak to taste with it made both ways.  I preferred the honey version, because my whole family could eat it and I preferred the honey flavor. However, really both the honey and maple syrup versions were amazing.

My kids are both competitive swimmers and we are always looking for healthy foods that pack a good calorie punch.  This was perfect, because desserts are one of the hardest menu items to find fun new recipes for that have whole, real ingredients.
